Since we are only a week away from Thanksgiving we thought we would share one of our favorite recipes for a side dish.
A wonderful creamy, custard-like casserole that goes well with any entrée.
Ingredients:
- 4 cups frozen corn, thawed
- 4 large eggs
- 1 cup whipping cream
- ½ cup whole milk
- 6 tablespoons sugar
- ¼ cup butter, room temperature
- 2 tablespoons all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
Directions:
Preheat oven to 350 degrees; grease 8x8 baking dish or your favorite souffle dish. Blend all ingredients in a blender or food processor until almost smooth. Pour batter into baking dish. Bake at 350 degrees for 45-60 minutes or until brown and center is set. Cool for 10 minutes before serving.
