With Christmas less than 2 weeks away we wanted to share a cookie recipe that has been enjoyed for generations with our family…even a local baker’s sister asked me for this recipe! What a compliment! I was excited to give her the POTATO CHIP Cookie recipe! That is correct these cookies are made with potato chips! If you love potato chips as much as I do then you will love these cookies!
POTATO CHIP COOKIES
1 cup sugar
1 lb. butter (Land O’Lakes at room temperature)
1 cup crushed potato chips (Lay’s original chips and I double the amount of chips)
3 ½ cups of flour (Gold Metal all purpose flour)
2 teaspoons vanilla
Cream sugar and butter. Add vanilla and dry ingredients. Drop by spoonful on ungreased cookie sheet. Bake at 350 degrees for 15 to 20 minutes. Cool on paper towels, sprinkle with powdered sugar.
